Tofu Broccoli Recipe (Vegan and Oil-free)

SERVINGS: good for 2-4 pax

INGREDIENTS:
- 6 squares firm tofu (the ones you get in the palengke)
- 1 head broccoli
- 1 cup coconut aminos*
- 1 tbsp soy sauce
- 1/2 tbsp tahini**
- 1/4 cup water
- 1 tsp of ginger powder (you can sub this with half-a-thumb of ginger, cut into strips)
- salt to taste
- canola oil, if frying

*Coconut aminos has a very interesting flavor profile. It's got the sweetness of coco sugar and the saltiness of soy sauce. It also is thicker and has that shiny, buttery quality. The one I have is a gift from a friend, but I've seen Shopwise, Healthy Options, and the groceries at SM Megamall carry this item. I think the DTI office in Makati also sells it. We have local producers of it! 

If you can't find any, you can sub the cup of coconut aminos with 1 cup soy sauce mixed with 1 tbsp coconut sugar or brown sugar. No need to add in the tablespoon of soy sauce from the original recipe. 

**Tahini is like peanut butter but sesame. It has a slightly bitter, nutty flavor. If you're not avoiding oil, you may easily sub this with 1/2 tbsp of sesame oil.

PROCEDURE:
- Preheat oven to 200C. You may also use an airfryer. Set it to 200C also.
- In a medium bowl, combine coconut aminos, soy sauce, tahini, water, ginger powder, and a pinch of salt.
- Cut the tofu in cubes.
- Marinate the tofu in the aminos mixture for at least 15 minutes. The longer you soak them, the better.
- Cut the broccoli into bite-size pieces and set aside.
- Line a baking tray with a silicone sheet (if you don't have any, disposable baking paper would do, but please invest in a silicone sheet – it's worth it #zerowaste). Place the tofu in the tray (make sure you save the marinade) and bake for 40 minutes, flipping it halfway. If using airfryer, fry for 20 to 30 minutes, removing the basket from time to time to move the tofu around for even cooking. You may also pan-fry. Follow your heart.
- Pour the marinade in a medium pot and bring to a boil. Cook the broccoli in the mixture until tender and the mixture turns into a thicker consistency.
- Once the tofu is cooked, combine with the broccoli and sauce. Heat again, if needed.
